Artisan Oven was born to an adventuresome, audacious family who never could draw a clear distinction between work and play. After the oldest daughter’s school/science project on sourdough and ancient leavening developed into a full on career, she asked her dad to build a Brick Oven! Why not? Challenge accepted and by the summer of 2003, the Glueck family was in possession of a brand new “Scott” oven! The oven was designed for bread, but after a few loads of sourdough boules, they broadened the experiment. The roasted chicken and beef was PHENOMENAL! The pies a pleasant surprise! Softening the guitar pick guard, not so nice… Then there was pizza. 

Pizza was a challenge worth overcoming. So within reach, yet still illusive. So they made pizza. Starting with backyard pizza parties for close friends who had a track record of forgiving mistakes. Then with a little more confidence, for sale to any one they knew. It became a Saturday night routine. Oh, and it was so much fun!

Fast forward 8 years of trial and error mixed with an occasional success, and Artisan Oven was founded as a production bakery serving the farmer’s market and local restaurant audience. They set up at farmer’s markets in the central Texas area to sell bread and of course, brick oven pizza(now made on site from their own custom mobile ovens). The business grew until in 2018 they decided to liquidate the bread and pastries and downsize to focus on the newest venture, a food truck. Today Artisan Oven is focused on serving sourdough, wood fired pizza to central Texas. We specialize in short pop ups near downtown office buildings or residential areas. And we LOVE serving pizza at the backyard parties of our Texas neighbors.
